CASHEW NUTS

(Anacardium occidentale)

The Cashew Nut is rich in oil and has a distinctive flavor. The fat content of cashews is lower than that of most other nuts; however cashew fat is highly saturated.

They are a good source of iron, zinc, potassium and magnesium.

It is extensively employed in South and Southeastern Asian cuisine, and especially in chicken and vegetarian dishes of southern India.
